This past week my garden was bountiful! It has always been a mystery to me how you can put a seed in the ground, tend to it, water it and about 6 weeks later pick something to eat! It is one of God’s true miracles! I love to garden and produce my own veggies. This week I picked from my garden 3 squash, tons of okra, 7 cucumbers and a pint of tomatoes and blackberries. It was wonderful to be able to eat something that I grew myself and helped to produce. My daughter often helps me in the garden and we decided to make a fresh garden salad with our bounty. I thought you might enjoy the recipe.
Summer Garden Salad
-Slice 1 cucumber, 15 cherry tomatoes and 15 okra into bite sized pieces into a bowl.
-Mix in ¼ cup rice vinegar, 3 tablespoons of Olive Oil, 1 tablespoon of sugar, 1 teaspoon of dried dill, 3 tablespoons of fresh shredded Parmesan cheese, salt and pepper to taste.
Lightly toss into the bowl and enjoy.
