One of my favorite pastimes is cooking and entertaining friends. Hosting a dinner party is probably one of my favorite things in life, so I try to do it often. We all get together and share our week, what’s happening in our lives, tell stories and laugh together. I have a dear friend who is an incredible cook. During one of my recent dinner parties, he brought over one of his famous recipes — his stuffed mushrooms. I made them at our last gathering so I wanted to share them with you. Thanks Rick, these are amazing!
Stuffed Mushrooms
16 oz. large pack of fresh mushrooms – the bigger the caps, the better
Clean and rinse the mushrooms thoroughly and take the stems off, leaving just the mushroom cap
1 – 8 oz. block of low fat cream cheese
1/2 cup of fresh grated parmesan cheese
1/4 cup of Italian bread crumbs
Mix these ingredient and then roll into small ball that will fit inside the mushroom cap.
Put a tiny bit of butter in each mushroom cap before you place cream cheese ball in each. Top with a bit of fresh dill. Drizzle a little olive oil on a baking sheet and place mushrooms spaced out evenly.
Bake at 375* for 25 minutes until slightly brown on top.
Eat and enjoy!
