I had never made whoopie pies before, but I was inspired to try them after learning about their Pennsylvania Dutch and Amish origins. These treats, made from leftover cake batter with a creamy filling, are like a sandwich of two cake-like cookies. Legend has it that children would shout “Whoopie Pie!” when they found them in their lunch pails.
After experimenting with recipes, I developed my own chocolate whoopie pies. They have a delightful cake-cookie texture, and the filling is slightly stiffer than regular buttercream. I’m excited to share the recipe and may even try a pumpkin cream version for the holidays!
