As the holidays wrap up and another new year has come to a close, I get a bit sad. It seems like the holidays go by so fast. I try to capture all of the magic and goodness the season brings but it just flies by too quickly for me. This is truly my favorite time of the year. My daughter and I have been blessed with good health and great memories this past year and we are excited about 2015.
We had a low key New Year’s Eve. We stayed home and invited a few friends to join us for a girls night in to watch movies, enjoy great food and toast at midnight while my daughter watched Sofia the First.
I made an appetizer that everyone seemed to love, so I thought I’d share it with you. It’s so easy and your guests will surely love it at your next gathering. I hope you all have a blessed 2015!
Bacon Wrapped Stuffed Dates
1 bag of pitted dates
1 8 oz cream cheese
1/2 cup shredded Parmesan cheese
Dash of garlic salt and pepper to taste
1 package of bacon
1 package of toothpicks
Mix cream cheese, Parmesan cheese, garlic salt and pepper together in a bowl. Take a small spoon and stuff mixture into the sliced pitted date then wrap a half piece of bacon around the stuffed date and secure with a toothpick to close. The date should be stuffed with the cheese mixture and wrapped with the bacon. Place stuffed dates on a baking sheet and bake at 375* for 30 minutes. Let slightly cool before serving.
